WHY EAT INSECTS? Most edible insects are extremely high in protein. The Entomological Society of America compiled the table to the right,to compare insects to more "traditional" sources of protein like beef, chicken or pork. The table also illustrates that insects contain high concentrations of many other essential nutrients, like iron, thiamin, riboflavin, and niacin. WHY DON'T AMERICANS EAT INSECTS? We eat pounds of insects every year, in foods like raisins, peanut butter, etc. The problem is that Americans stereotype insects as being dirty, slimy, gross animals. However, as this ABC shows, the rest of the world likes them just fine! |
